Will this work properly on pex, or does it need to be clipped on copper pipe?

Plastic is an insulator, so it does not transfer heat well. It may work, but not as designed. Why not replace a segment of the PEX tubing with a copper fitting? You would have better results.

Does the Aquastat connect directly to leads dedicated "aquastat" leads on the pump or is it in line with the main power supply to the pump?

It connects in-line with the main power, there is no relay or other switching at a lower voltage than the line (110V) voltage.

My timer has gone bad in my pump. Can I use this to replace the timer? Makes sense to me.

Depending on the application and required temp range needed. If the temp drops enough to allow the contacts to close and start the pump, and opens when the high temp is reached stopping the pump. The location, and temp range of the aqua stat may be very critical to proper operation.

We have a single circulator pump located on the return loop. Don't I want the circulator pump to operate until the water goes below a set temperature?

yes, this thermostat is "closed" until the temperature reaches 105 then it opens , the pump stops and when the temperature drops to 85 degrees it closes again to let the pump run.

Works well to run my circulator pump.

Great addition to a hot water recirculation system

I can't believe I used my recirculation pump for years without this! Why run the pump when you already have hot water throughout the system? Adding this has reduced pump run-time by probably 90% for us. We do have the hot water and return lines fully insulated, which helps, and live in CA so temps aren't extreme, so your experience may vary. What a huge savings in pump run time and electricity usage. I calculate that this pays for itself in well under a year. It would be nice if you could tune the temperature, but this is really a minor point, perhaps for a future improvement.
