so this one is fine for using a regular full-sized stainless serving pan/steaming pan?

As long as the dimensions are OK it will definitely keep water very warm for a while

Can I use a bag of ice in it without it leaking after a couple of hours?

I've never tried it, but the box is a solid piece (no seams) so it should work

Will it hold full pan

YES IT ACTUALLY CAN HOLD UP TO 3 FULL SIZE PANS
