MITSUMOTO SAKARI 9-Inch Japanese Kiritsuke Chef Knife, 9Cr18MoV Steel

I picked up the Mitsumiro Sakuri Kiritsuke knife looking for something versatile that could handle both prep work and finer slicing, and it’s been a great addition to the kitchen. The first thing you notice is the design. Kiritsuke-style knives have that distinct angled tip, and it’s not just for looks—it actually makes precision cuts a lot easier, especially when working with vegetables or trimming meats. This knife feels well-balanced in hand, and the blade has a nice weight to it without being too heavy. Performance-wise, it’s sharp right out of the box and holds an edge pretty well with regular use. It slices cleanly through vegetables, meats, and even more delicate items like herbs without crushing them. It’s one of those knives that makes prep feel smoother and more controlled. The handle is comfortable and gives a secure grip, even during longer use. It doesn’t feel overly premium, but it’s definitely solid enough for everyday cooking. As long as you take care of it—hand wash, dry it properly, and keep it honed—it should last. A couple things to keep in mind: like most Japanese-style knives, it’s not meant for heavy-duty tasks like cutting through bones or frozen foods. Also, if you’re used to Western chef knives, the shape and technique might take a little getting used to at first. Overall, this is a great all-around knife for home cooks who want something a little more refined than a basic chef’s knife. It looks good, performs well, and adds a bit of that Japanese-style precision to your kitchen.

I honestly didn't expect much when I ordered this knife because of the price. I'm a professional sushi chef and have been working in the industry for more than 30 years. Over the years, I've owned and used many high-end Japanese sushi and kitchen knives, so I have pretty high standards. I bought this knife fully expecting that I might end up returning it if it didn't perform well. After using it, I was genuinely surprised. The fit and finish are excellent, the blade came very sharp, and it has stayed sharp much longer than I expected. What impressed me most is the value. A Masamoto gyuto can easily cost around $250, and a Kikuichi gyuto is around $220. While those are outstanding knives, this one performs far better than its price would suggest. For most home cooks—and even many professionals—it offers exceptional performance without the premium price tag. I've used a lot of knives over the past three decades, and I don't recommend products lightly. If you're looking for a quality gyuto that won't break the bank, I think this knife is an excellent choice.

The quality and built of the knife is really nice. Comes in a very nice case. Comes with a cleaning wipe and oil for the blade. Very well packaged. I will say sharp is an understatement. First cleaning of it, I folded my sponge to not touch the edge of it and it sliced my sponge faster than Deadpool could slice folks from the TVA. Now my favorite sponge got slice and diced more than a game of fruit ninja. This thing is so sharp it'll cut your eyeballs just looking at it. I decided to play an IRL game of fruit ninja with it and cut a water melon up. It sliced through it like a F35 cutting through the air. Time will tell how it holds up but I'm highly impressed with it so far. Yes I accidentally cut my finger on the first use by accident. Top tier knife for the price. 10/10

Very sharp, I recommend a knife magnet to store it on the wall. You do have to hand wash it right after each use, but if you can do that then this is a top-tier knife for the price. It looks very traditional with the wooden handle and forged appearance on the blade, and it's quite functional and easy to use. It's technically a meat knife, but I use it in vegetables all the time as a general purpose chef's knife and it works great!

I’m absolutely impressed with this knife! It’s incredibly sharp and cuts through everything effortlessly, whether it’s fruits, vegetables, or tougher ingredients like meat. The precision is outstanding, making meal prep so much quicker and easier. The handle is comfortable to hold, and the knife feels well-balanced, which adds to the overall ease of use. It also seems very durable, so I’m confident it will last a long time with proper care. If you’re looking for a reliable, high-quality knife that delivers professional-level results, this is the one to get. Highly recommended!

Love this knife, I use it daily in a commercial setting. Holds a good edge and is relatively well balanced in my hand despite its length. 10/10 would purchase again. Great quality for price.

I’ve been a chef for the last 20 years and can appreciate most Knifestyles and their different advantages. My favorites are definitely of the Japanese styles. Finally figured I’d try one of these since I heard it was a decent knife for the price. Nothing horrible to say about it, nice quality and very durable but weight balance and thickness of the blade seems way too bulky for my taste 🤷

Was super impressed with the knife, I use it daily as my work horse, holds an edge fairly well, the only flaw I noticed, was the blade itself was slightly warped but it is hardly noticeable........until your getting small small with your cuts but if you know where you use the blade most is great... would buy again... and for the price. Amazing. Buy one.... also the heel having a sharp edge I love that... gives your finger a nice grip

Good product and fast delivery.

Excelente material, balance y filo

This knife is amazing. I’m a chef and I use this knife everyday for all sorts of tasks. Cutting veggies, cutting meat, butchering chicken, slicing, dicing, you name it. It’s still super sharp. I just keep honing it regularly with my diamond steel. That’s it. It hasn’t needed an actual sharpening yet. For this price, you can’t lose. Honestly, this knife performs just as well or maybe even better than some of my knives that cost hundreds of dollars more. To the point that I kind of question why I bought those knives because I bought them after this one. Ah well, it’s still cool to collect knives but in terms of utility, you can’t beat this knife at this price.

Update: the vendor sent me a second one, i have adjusted the rating to reflect that. Thank you so much. Original: I was really excited about this knife when it arrived. The packaging is great, and it has a nice weight to it—feels solid and well-made in the hand. Unfortunately, it’s not as durable as I expected. This is only the second time I’ve used it, and the tip broke off just from placing it in the sink to wash. I own about seven other knives, and this is the first one that’s ever broken like this. I just got a nice display for my knives, and now my statement piece is already damaged. Pretty disappointed.
