Do South American cichlids like this?

Verify that your South American Cichlids are herbivores. If their Omnivores go with NorthFin Cichlid.

What is the best size mm

Depends on the size of your fish. 1mm is like the size of a pencil tip. As said above very dependent on the size of your fish.

The best size to get in millimeters

My tropheus and mbunas at at 5-6cm could eat 3mm pellets but I still prefer to feed them 1mm as they are easily gobbled and digested. I always presoak the pellets though.
