Can I switch between printer 1 and printer 2

Yes, you should be able to switch between devices and print. We used this switch box on a couple of older CNC machines.

does this device switch all 25 pins or just those required for printer?

Hello, use the pin out / wiring diagram for the printer. The switching device is just what the name implies, a switch. The wiring is serial, should work as designed.
