Q: I know this product tends to be a Christmas item but any idea of the next availability might be?

You have to check the Amazon website to find out whether it's still being sold. Item may have expiration date and is then taken off the market.

Q: are they wafer backed?

As someone who considers a wafer to be like an ice cream cone, I would say no. There is a somewhat stronger back to the soft cookie, but I wouldn't call it a wafer. They are delicious though!

Q: I usually get these in Germany around Christmas. Any way of knowing the expiration date before buying?

Although I have occasionally bought Wicklein Lebkuchen in the past (less expensive than Schmidt products from Nuernberg), I bought the latter online from the European Deli for Christmas 2022. Four types are left: Nut Elisen-Lebkuchen (best at least until Feb. 2, 2023); Honey Elisen-Lebkuchen and Brat-Apfel Elisen-Lebkuchen with tiny pieces of apple (both Mar. 3, 2023); and Cinnamon Stars (Aug. 8, 2023) stamped on the packages. All are kept in a tin. I have not noticed any deterioration after the "best" dates except in chocolate-covered gingerbread cookies (the chocolate glaze turns dull and grayish) and the plain gingerbread, which tend to dry out. The sugar-glazed ones remain unchanged. All are fine as far as I'm concerned, but many people are misinformed about the meaning of "best before" and expiration dates. As far as I know, the European Deli does not sell products after "best before" and "sell by" dates. If the Wicklein Lebkuchen are now beyond the dates referenced above and sold at a discount, I would buy them for my own consumption.
