What do fenugreek seeds taste like?

Warm, nutty and faintly maple sweet with a clean bitter finish. It is that bitter-sweet note sitting in the background of sambar, pickles and many South Indian dishes.

Most often they are tempered. Drop a quarter teaspoon into hot oil for a few seconds until they darken by one shade, then pour the whole lot into your dal or curry. They are also ground into spice blends and used in pickles and dosa batter.

Why did mine turn bitter?

Usually too many seeds or too much colour. Fenugreek turns harshly bitter once it browns, so lift it off the heat the moment it changes shade, and start with a quarter teaspoon rather than a spoonful.

Yes. Soak the seeds and sprout them for methi shoots - customers regularly tell us the germination rate is excellent.

How are these different from kasoori methi?

Same plant, different part. These are the whole seeds, added early and in hot oil. Kasoori methi is the dried leaf, crumbled into curries and breads while they cook.
