Q: is it double sided? sharp side and dull side?

Not double sided. Sharp and dull. Worked well for skins with a stretching board, but not without.

Q: Would it be too sharp that it would cut the hide?

It's not overly sharp. You do run the risk of putting holes in the hide if you press too hard and get your angle wrong but all in all it's much easier. I was using a regular knife before and it was taking me 30 to 40 minutes to flesh a hide, with this I'm down to about 15 minutes. I'm using it on fox hides.
