Would it work with an 8 oz Butane canister from Coleman?

Accepted Answer

No, you need Isopro (butane/propane) mixed blend canister type fuel that screws on. The butane fuel cans that you use on lunchbox stoves do not work.

why are there no instructions included on how to use it?

Not sure why you didn't get instructions, but it's easy.  
1) Screw it onto your propane gas bottle, firmly, but not so tight you can't unscrew it again.  
2) Pull down the lever on the side to release the arm supports, and spread out the arms (they rotate open in a circle). 
3) Being very careful to keep your fingers below the arms, depress the red ignition button to ignite the flame.  Mine usually ignites on the first try if correctly depressed.  
4) Control the flame by turning the side lever.  
Also, you can find YouTube videos demonstrating this type of stove (if not brand).

Question 3

I'm looking at a 48oz portable tea kettle. How long would it take for this to boil 48 ounces?

This is a small pocket sized stove.  My concern would be safety of having a large vessel staying on the small stove.  This stove is for heating small things like a can of soup or water for 1 - 2 people to have coffee.  That said, it is a wonderful stove for small jobs.  48 ozs. will require a medium sized pot and I'd trust it on this stove only if I had my hand on the pot handle at all times to support it.  I'd guess 5 - 10 mins. to bring 48 oz. to slow boil.  I don't know for sure because I would not use this stove to boil that much water.
