Good alternative recipes for dedicated meat-eaters.
I like the book. I had been thinking of adding more protein rich vegetable choices in my diet and cooking repertoire and this actually has a number of recipes I would be willing to try out and eat. The recipes are well written and the choices available are quite a lot. The recipes can also be altered to make it 90% vegetarian for those just trying to see if they will like it and cannot bear to go fully vegetarian (of which I a #1 group member). This is a very good addition to my cookbook collection.

Recipes need modification
I've only tried two recipes. However, both suffer from similar flaws, so I'm writing a review. For both recipes I needed to do quite a bit of modification to make them work. More specifically, in Roasted Broccolini & Green Lentil Salad (p. 119) the broccolini needed much more roasting time than called for; the 2 cups of lentils were disproportionate to the broccolini (I cut the lentils way back); the dressing was twice as much as needed. In Lentil & Cauliflower Tabbouleh (p. 123) the quantity of cauliflower (yes, I chose a small one) and parsley (two cups of chopped parsley -- that's a lot) way overwhelmed the rest of the ingredients. So I removed half the cauliflower and parsley, and found I needed to double the rest of the ingredients to get a proportioned salad. Hmmm. Never had this problem with Ottolenghi or Peter Berley or any of the other recipe books I use. In addition, the instructions are loosey goosey at times. For example, what is "1 small bunch green onions, white and green parts removed, thinly sliced." (p. 123). What are the white and green parts "removed'' from? And what is a small bunch? Yes, I can use my judgement. But clear instructions would make this a better book. Both recipes (as modified) tasted quite pleasant. Which is why I'm giving three stars, not two.

Very nice recipes
I am making my way through the recipes and find them to be easy to follow and the ingredients are very accessible at my grocery. I really like that the author includes how to incorporate meat as an option or how to go vegan. Lots of flavors! The book has really pretty photos of the dishes to boot!

This book is much like Thug Kitchen if you have purchase that cook book ...
This book is much like Thug Kitchen if you have purchase that cook book as well. All recipes have beans in them. I think this is good even if you are just trying to do a meatless Monday. Good photos, I only wish that I knew where to purchase some of the beans in the book. I am sure the beans could be ordered but are not in grocery stores most likely.

Kindle version poorly formatted; many recipes with apparent errors
[Kindle version] I have been searching for a book that focuses on legumes as there aren't many of them. This looked promising, especially for the $.99 price. So I took a chance. I was deeply disappointed in this cookbook. First, the graphics that accompany the title to each recipe overlap the print, making the recipe title often unreadable. Many photos or graphics are placed on individual pages so that they don't read as if they belong together; thus, they often make no sense. The recipes themselves look good but when you read the instructions closely, you discover they are poorly written. The ingredient lists often included cooked legumes but then called for long cooking times in the instructions. Given that legumes are fast cooking, many of these recipes made no sense. I'm an experienced cook but I had no clue in many of those recipes exactly what was required - dry or cooked? And why was a cooking time listed of over an hour when the lentils were already supposed to be cooked prior to adding? I did not trust that they would turn out correctly given the confusing instructions. I returned the Kindle edition because it was so unreadable. I won't order the hardcover unless the publisher does a better job of editing and ensuring the accuracy of recipes included and improves instructions. It's a shame. There is a need for a book like this one.

Best!
I have over 300 recipe books and many that are vegetarian. Iโm Not veggy but I like to eat a lot of mainly plant based meals. This book is the best! Superb tasty different recipes and with tweaked suggested on all of them including ideas on adding meat! I love it. Iโd say anyone with little or no cookbooks that wants or needs to increase their awareness and confidence in rustling up meals this is your go to bible! Youโll feed you and your loved ones well and tastily in this book!!!

Excellent book. Contains all you neeed to know about pulses
Pulses get a very mediocre press and not seen as a very interesting food. This book can change all that and not only for those seeking a more vegetarian diet. Pulses are an excellent food source. This book shows ways of making them more attractive.
