Is the white actually white? or a bit yellow?

It is bright white, not off white(a bit yellow)

No, this fleece blanket does not shed. I washed my own before using it and I was pleasantly surprised when the lint filter was empty after the dry cycle.

Is this suitable for winter climates?

I am not sure about using this blanket in "winter climates" because I'm not exactly sure what you mean. I purchased 2 of these blankets, and I keep them on the bed during summer as well as winter. I keep warm when the air conditioner is on in the summer, and so far I have been comfortable in the winter. I live in Texas so we don't have extreme winter weather (usually!), but I was quite comfortable when the temperature was 39 degrees outdoors and about 70 indoors. I have a comforter on my bed which I also use when it gets really cold (for Texans that is!). Hope this helps!
