Use for Frying or in the Oven
We really like this chicken breading. It's flavorful and easy to use. However, I find I want just a bit more flavoring than just having the breading on the outside of the chicken so I take a half a package of the breading mixture and add water (about 2 cups or so - you want it really watery), light salt, pepper. It makes the chicken flavorful on the inside as well as out and it's especially nice to do this for the bigger pieces of chicken otherwise they seem a bit blah to me. I place my chicken pieces in a large tupperware container, pour the water mixture over and marinate in my fridge over night. I turn the bowl upside down a few times during marinating so that the pieces on top are getting marinated as well. When you're ready to fry, just drain off the marinade and bread as normal.To Start: I use a fork to whip 2 eggs with 1/4 cup of water for an egg wash to dip the chicken into. Then I add about half a package of Sylvia's Fried Chicken Mix to a small paper bag.Dip chicken into egg wash and then place 1-2 pieces in the paper bag and shake.If I'm frying or deep frying I add the chicken to already heated canola oil and fry.To oven fry large chicken pieces: Preheat oven to 425. I use foil broiler pans and place just enough canola oil in the bottom of each pan to barely cover the surface. Then I place breaded chicken in the pan with the meaty side down and bake for about 30 minutes, turn and bake another 30 minutes.***Please note: I have an oven that has a "hidden" element so my oven tends to run a bit cool. If you don't have a hidden element then you might want to lower the oven temp a little bit to 400-410 degrees.We like our chicken pretty crispy so right before I take it out, I turn on the broiler and broil each side for about 2-3 minutes.If I'm oven frying just chicken wings then I cut them into pieces, use the egg wash and bread them. I cook them just like the bigger pieces of chicken except I only cook them about 15 minutes per side and then broil as necessary to get them good and crispy.The chicken is somewhat crispy with oven frying so you don't have to use your broiler unless you're like us and like it really crispy.I'm almost sorry I bought this mix because before I only fried chicken maybe once every few months or so but since getting the mix, I've been using it at least once every two weeks.We also tried the Hodgson Mill Seasoned flour and it's good but we like the Sylvia's brand better.One last tip: We're kind of wimpy about hot spicy things but I've found if I marinate my wings in buffalo sauce for a few hours and then bread with Sylvia's fried chicken mix, it cuts the heat and now I almost always do my wings this way.

Amazing!
I have been using this mix to fry chicken for over 3 yrs. Let me start by saying, I do not fry chicken without it I saw a review stating that the mix was spicy. The mix is not spicy at all. I do not have a tolerance for spice at all. I do not even use black pepper (because I feel it's spicy). The key to this mix is to not over season your chicken or whatever your going to use it for. Keep in mind that the mix is seasoned. In addition, it states on the instructions to use an egg and add water. Do not water down the egg too much. If you like super crispy chicken, then do not add water. If you want a great crisp, but not too much, then add a little water to the egg. Once you start to use this mix, you will not want to go without it. It is well worth the money.

Good Stuff!!
Forget Larry the Cable Guy and stay with Sylvia's. I have been using it for years and have never had a bad moment with it, In fact, I have had plenty of attaboy comments for my fried chicken, fried fish and fried vegetables. I have found that the product likes buttermilk better than water, but then water is almost free. It works well using the directions that are printed on the package, but it works better if you go through the dredging process and set the chicken (or whatever) aside for a few minutes until the coating has become hydrated and is sticking to the chicken (or whatever) and then dredge it once again in Sylvia's mix. Don't be afraid to use it with fish, or even add a little Cajun spice to the mix for that added kick. Yummmm!

The best I have found!
Very very good and very easy to use. Leaves deep fried chicken clean, crisp and with no traces of oil or greasiness when cooked in an sustained temp hot oil 360-375! But a word of caution, if you brine your chicken in salt go easy as this breading has a large amount of salt. Also be sure and let the chicken set for a while after breading to allow the breading to adhere to the chicken. I was having a problem with bald spots and missing breading due to cooking to soon and not allowing the breading enough time to adhere. You will be able to look at it and know you have let it set long enough as the powdered look will disappear. The easiest way I have found to bread my chicken is to use a Wal-Mart bag! Pour the breading into the bag, dump wet chicken pieces into bag and shake. Remove chicken and toss the used bag into the trash. Be sure the bag is not damaged with small holes before using, its not good and will leak the breading! Not a good situation for sure!

The best!!!
I have been looking for an authentic tasting fried chicken and this is it! I dipped chicken parts in buttermilk, rolled in product, then repeated. Instead of frying I put chicken on a baking sheet with about 6 or so tablespoons of oil and baked at 425 and turned halfway point to brown evenly. Finally found something I like!!!
