Is there a better method for popping these packets?

I bought and used our machine for somewhere around 3 1/2 years. After using it the first time and trying to squeeze the oil and seasoning out of the package you tend to burn your fingers/hands on the kettle. I solved the issue by freezing the cases of popcorn/oil/seasonings. The freezing had NO ill effect on the packages. Just turn both switches on. You DO NOT need to wait for the kettle to get hot. Once it's hot enough it will start to pop the corn. You will know when all the corn is popped when there is less then 2 or 3 kernels in 5 or so seconds. Just unlatch the kettle, pour out the remaining popcorn and start all over. it's a one person operation. serve about 300 employees in 2 hours. I'd go through about 36+- packages. I think I used the 8oz. bags. Afterwards I would clean the entire unit with windex. The removal parts were put in the dishwasher. I mounted it it's own 4 wheel cart and would cover with a large plastic trash bag until I needed it the next time. Worked out PERFECTLY, entire unit looks like it just came out of the box. I would put my 3 1/2 year old unit up against a Brand New Anytime !!! I've most likely have gone through 20 cases of 40 count popcorn.

How much (in cups) of popcorn is there in each pouch?

When a popcorn is sold as "4 oz" or "8 oz", that is the WEIGHT of the popcorn, not the VOLUME.  So if you need to convert 8 oz by weight to volume, you need to know how dense the popcorn is.  If this is average density popcorn, then visit a site that gives the conversion information. So in this case, the 8 oz of popcorn kernels is 1.18 cups by volume.
If they are selling it as 8 oz by volume, without saying so, then they are engaging in deception.

How long do they last?

They're typically gone within an hour or so of making 😉...But assuming you mean "last" in storage, the box I just ordered/received in March/21 has a "Best By' date of Feb/23 so at least 2 years on the shelf..but this stuff is soooo dang good that I can't imagine a box of 40 being around that long...
