Will these labels just peel off instead of washing off? May not always have water access.

Not really. I have peeled them off, but there is a gummy residue that is left that washes off with water. There are other labels on Amazon that do peel off though

Can they be used on freezer bags?

Yes，it works on freezer container and bags

How long do the lables last if unused 3 mos 6mos?

A roll lasts me almost two years. Life most adhesives that are water soluble they need a clean, dry and smooth surface for maximum adhesion. I use them on home canned goods. They stick well to smooth sides and tops of mason jars, as well as over some of the bumpy parts. I have not had any come off during storage. I’m on my third roll. So that’s over a thousand jars. Just keep the roll someplace dry. They last a long time.
