I'm completely new to fountain pens - can you fill up these converters and keep several in a bag rather than taking ink with you? Or will they leak?

You should buy a small travel ink bottle kit rather than trying to keep these filled while traveling. These will probably leak when not in a pen and will definitely be messy to handle if left full. I use a small kit by from amazon called "Tekukor". It's a small velvety bag with ziplocks inside to prevent spills, and in the ziplock is two small glass ink bottles which hold enough ink for months of intense writing as well as an ink syringe with non-sharp needle tip for filling any kind of pen. You can dip the tip to fill or use the syringe and fill the converter/cartridges manually as well.

I am left-handed, will this pen work for lefties?

Don't see why it would not work for left handed. But the one I got does not write very well. Skips alot.

Will this fit the Parker IM?

I'm not sure but I don't think so.
