Legendary Beans Live UP To The Hype
Frances Mayes wrote about these beans in her latest book A PLACE IN THE WORLD. Reminded me to take a look...and found them. Shipment was quick and the hype for them for real. Just slow simmered a pound of these overnight with fresh sage, plenty of fresh garlic, salt, peppercorn, water. Tortured ourself smelling them cook overnight. This morning: They are slightly sweet; have a true BEAN flavor, skins are intact; but the centers are creamy. They are perfect to eat as a side dish; will be mashed (Tuscan style) on crostini with a streak of good olive oil and should elevate my Pasta e Fagioli into the upper levels of peasant cooking. Have already ordered more for winter. My doctor says eat more Mediterranean...eat more beans...with pleasure!
