I'm curious about the motor size, shaft diameter? How hard would it be to change the motors out for stepper motors?

Motor outer diameter: 25mm; Shaft diameter: 4mm D shaft, you can check the content in the video for the specific size. If you need to replace the stepper motor, please pay attention to the appropriate size (hole position, length, etc.), otherwise it will not match.

Is anything else required to control, drive or program this

I actually purchased this one by mistake, but yes there is. Arduino, Raspberry pi, etc. The only electronics that come with this are the motors, which don't have any kind of connector on the wires. So you'll also need some soldering skill

Where would I find instructions on how to add a Arduino?

You will need an H bridge to provide voltage to you motors through an external battery, and use the Arduino to regulate this voltage. Then either use Bluetooth or RF to communication to the Arduino.
