Nice Knife!
Nice knife. I have three Japanese chef style knives: A Hattori Gyuto, Miyabi Gyuto and this Yoshihiro Kiritsuke. All are excellent knives and it's only a matter of which I reach for on any given day as to my preference of the three. I like the blade design and unique steel w/this one. The Ginsan-Ko steel is a bit harder than the VG-10 Hattori (HRC 62-63 vs. HRC 61) but it's the blade shape that has me reaching for it often when chopping vegetables. It's extremely sharp and holds an edge well. A nice knife to add to one's collection.

Great knife, makes me feel like a pro!
This blade is gorgeous and is by far the sharpest I've ever used. I've had a few twin star Henckels and Wusthof Pros, and this is noticeably sharper. I opted for this model because it is stainless and won't rust as easily. Maintenance is a breeze. The knife I got had some minor marking on it when it arrived, but it easily buffed out to a perfect shine. Great price on Amazon, with fast shipping.Watch your fingers and don't get cute trying to test it on your finger or arm hair - it WILL cut you.

Awesome blade... handle, not so much.
Makes for an awesome general purpose knife. Also does well with heavy tasks because the blade is so thick.Would give 5 stars but the handle cracked really bad in two places. Hasn't made the knife unusable but the handle will need to be replaced at some point, which is obviously not a small issue.. didn't plan to need to spend an extra 60-100 when I purchased.Will probably buy another Yoshihiro despite the handle.

Best knife in my kitchen.
I've used this knife for 3 years and love everything about it. The quality is greater than the price. At first, I was concerned that the blade might chip when used on or around bone. However, there's not been a single issue. I struggle to find a knife that is better at any price.

i been use this knife for 2 years nowthis is one of my favorite knife.i been work as sushi chef for 10 years know and i personally love this style of knifei will buy upper version next time if i have chance.it is not cheap but it worth it if you try it.
