When the M-F alarm sounds in the morning and I turn it off with the side button, is it still automatically set for the next M-F morning?

No, it is not automatically set for the next day. Press the side button again to reset the alarm. The bell symbol will appear and be ready for the next day.

What do I need to do to keep the time constantly displayed it comes on for 1 minute then goes off?

Does double-pressing snooze turn the alarm off til the next day?

Hi Bailee, Thank you for contacting us and it's my pleasure to help you today! No, when your alarm goes off, you need to press any of button EXCEPT snooze button to turn the alarm off till the next day. But if you double-pressing the snooze, then you can get extra 9-minute sleeping. Any issues please contact us via E-mail: support@odokeeshop.com , we are always serving for you! Best regards, Odokee Customer Team

Does this alarm clock keep exact, to the second, time?

It doesn't show seconds. It seems to keep good time. My big concern was the brightness and this clock dims perfectly.
