Scoby not floating, it’s been 18 hrs. Does it need to be replaced?

Great question, some Scoby sink and some swim. Have no worries if the Scoby sinks. The important thing is that a new Scoby forms on top your brew. You should see a new Scoby starting to form within 3-4 days.

Can this be used to make acv?

Unfortunately, this can not be used to make ACV (Apple Cider Vinegar).

Is this just the scoby w/o the 10% mature tea that's needed? Video looks like hardly any of the tea so for 1st time need that tea.

Yes its just the Scoby with a very small amount of liquid. We made a starter tea and placed the scoby in it. It grew and we are about to use it for our first batch
