Q: What is the difference between porridge oats, oatmeal, rolled oats, steel cut, Flahaven Progress Oatlets?

Oatmeal is the generic term for a cereal cooked from oats and in the UK is typically called porridge. Rolled oats are made by crushing the oat kernel with some of the husk remaining on between steel rollers. Steel cut oats are made with the fully husked kernel cut to various degrees of fineness. Both are further processed by varying amounts to make them quicker cooking. Steel cut typically take longer to cook. The terms oatlets, original, old-fashioned etc. are just the manufacturers names for their various products and have no descriptive meaning per se. Both Hamlyn's and Bob's Red Mill use the term "Scottish" for their finer ground steel cut although Bob's Red Mill, that are quite good are produced in the US.

Q: Is progress oats the same as rolled oats in the USA?

No, I do not believe so. Flahavan’s Progress Oatlets cook up really creamy and flavorful. Rolled oats are firmer and courser.
