it checks so many boxes
i looove red chile powders but i don't do high heat. This pepper is not med-hot. i would call it medium or even mild. The flavor is really good. The price per ounce is very low. it was delivered overnight. The color is more orange-red, not red, but that makes for an attractive dish. Not an important feature but it is very finely ground. The most important thing, it tastes like Chimayo grown. i have only been able to find one ground pepper i know for sure to be Chimayo. Bueono Chimayo insprired pepper does not taste exactly the same as that one but i would not expect that. it is easily just as delicious. i would say it is authentic. i recommend and i will repurchase if i ever manage to use it all. it's a hefty bag. Update: No matter how airtight your storage, it clumps together a bit. But it separates when you use it.

Absolutely the best for chili!
We eat a lot of New Mexico chile in our house, being big fans of both Hatch chile and chimayo chile, which is absolutely the best flavor for authentic red chili. This chile powder does not disappoint and is at the most reasonable price we could find for chimayo chile powder. A little goes a long way - and for all of our dishes where we include a red chile sauce, this is absolutely the best to use. We did not buy the extra hot, the medium provides enough heat but an abundance of flavor which is what you want. We have friends that don't like very spicy dishes that absolutely rave about my red chili and my adovada. Highly recommend you purchase and decide for yourself. You won't regret it.

Best powder chile I’ve had in the last few years. Great taste. Even though it says hot, it is not that spicy.

BUENO Medium Hot Red Chile Powder
Spent a lot of years in NM. You get spoiled there when chile is involved, and it often is. Bueno has consistently been one of the better brands for New Mexican cuisine. The chile has the taste you come to expect and desire for Southwestern food prep. We use it often.

Great.
I used this for cooking when I lived in New Mexico. Saw these red chilis being dried on top of metal roofs on homes on American Indian Reservations. Those Indians knew what they were doing. Great memories.

consistently high quality
As a northern New Mexico native now living in Tennessee, I use the Bueno Chile powder to make stacked enchiladas similar to those I enjoyed at "Charlie's Spic & Span" in Las Vegas, NM. Nothing in Nashville even comes close!
