Q: What gas canister does it use in the US?

We use the iwatani gas. I'm sure there are others canister that fit. We live on the island of Kauai..... there is not much to choose from. BUT IT WORKS.

Q: This looks exactly the same as the original, except it's now black. Does it really cook better? Some reviews still mention uneven heat distribution.

They claim the coating is improved. This is a great product. Yes, the ends cook a little less, but you just move the balls between locations. This is the same as what you do on a classic takoyaki plate. This product gets a big thumbs up from an Osaka takoyaki expert!
