Q: how long does this last once opened?

I've had it in the fridge for a few days under a year and it's absolutely fine. Previously had the same brand at room temperature and that developed mould particles after two months. It's pourable from the fridge and the container fits in a standard large door section.

Q: is it organic? thanks

Maple syrup is made by taking sap from the sugar maple tree and is then heated to reduce it to the right consistency. It takes 40 gallons of sap to make one gallon maple syrup. It isn't real pure maple syrup if anything is added to it; so no brown sugar, no honey, no carob syrup etc to be added to the maple syrup. I tend to think of these types as maple "flavored" . It may or may not say organic on the bottle, but IMHO it comes straight from a tree, boiled, *nothing added* and then bottled, then it's organic. Trust me I'm a Canuck.

Q: how long can you store them

as long as you keep the jay sealed, and keep it in a cool place, i.e. a frig, it will longer than you! Jars have been found in ancient Egyptian tombs that have been there for a couple of thousand years, and when opened they were found to contain honey, and it was edible! I think you can keep it as long as you need to.
