will this work for shaving down the top of a door?

The shorter Surform is not ideal for large jobs such as a door. The longer version is suitable depending on the door's construction. Like any plane it is more difficult to use across end grain, tending to split the trailing edge and catch. Some doors have end grain fully exposed on the outer verticals. In such a case the Surform should be used inwards from each side.

Would this be any good for taking the top layer off scaffold boards and finished with sanding?

I would say it would take a very long time your be better off buying/renting a belt sander.

The blade width is 40mm and 140mm long.
