Why does some of the settings on this go back to zero

The only setting, that I'm aware of, that goes to zero is the countdown from the initial time setting.

Can this also be used for backpain?

I shouldn't think so. Designed for something quite different. There are specific machines for back pain though. I would research the "Tens" range.

Does this test and record the strength of pelvic floor muscles?

No it doesn't it just works your pelvic floor muscles but it does strengthen them as it did for me

Does this have a probe with it?

If you mean a separator probe that is outside and moves along leg when it it vibrates then yes, I found it strange and superfluous so don't need or use it
