Not a useful answer sorry, but here's the 4 species of bacteria so you can research if they can be used for cashew cheese: Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp.lactis biovar. diacetylactis and Leuconostoc mesenteroides subsp. cremoris.

"infinite" could be a good answer here! When you get this, follow the instructions to make a pint or so of culture-filled formula, and then freeze it in ice cube trays: each time you make a cheese use one cube. When you start to run low, you can stick a couple of cubes in milk (as you do with the dried powder) and replenish your stock. I have made perhaps.... 40 or more kg of cheese off one sachet.
