yes, half sheet will fit in the rack. I use the rack all the time and it is convenient to move around with the wheels. Holds 20 pans and I also have a meat slicer on top too.

It holds either full or 1/2 commercial trays. They just go in different ways.

It can. I don't take it apart and store it because I found it is useful all year round. I bake all year round anyways.
