How is the longevity of this steel and is 11 inches long enough? I am use to using 12-14 inch steels and will see heavy use.

I have had mine since 1998. It saw light, home use for the first 10-12 years and then came to work with me. I am a meat cutter in a grocery store so it sees a fair amount of use. It's getting a little beat up now but it still out performs the brand new victorinox steels the store orders for us.

Is this the f dick 2000?

No idea what the 2000 is. But as for mine, The packaging says F D Dick D-73779 Deizisau Germany . At the bottom it has the number 7650428 just above the UPC so it seems to be the same model offered today. but I bought mine some years ago.
