No you can just use a nozzle if you haven’t got a coupler.

Are these ‘tipless’ piping bags i.e. can you use them without a piping nozzle? Thanks

They are not tipless you have to cut an open at the bottom to fit the nozzle. Yes you could use it without nozzles. Just cut the size of hole at the bottom you want. I have used them first without nozzles this worked well but then I wanted to do fancier swirls so I went and bought the nozzles.
