Can this be mounted to a wall?

This product is not designed to mount on a wall.

Will this work for 7" stir straws for coffee?

It would depend on how thick the stir is. It is designed to dispense 1 straw at a time and if the stirs are a smaller diameter than a straw you may end up with more than one stir.

Will this hold pencils for the classroom?

Without a doubt it will hold pencils for the classroom. I highly suggest it!
