if you pour pancake batter or egg, does it run off to sides or stay in the middle?

Neither, because the bottom is flat; it has neither a concave nor a convex bottom. You need to spread whatever is poured in.

Does anyone know how thick this frying pan is

I know it's heavy solid you won't be disappointed
