Are the sardines that are packed in olive oil also flash fried beforehand and in what oil vegetable or olive?

I don't think they're fried. But they are ready to eat. I think they are heated in the canning process. The can says the ingredients are : pilchard fillets (same fish as sardine, just older English name); extra virgin olive oil (19%); salt. Fish caught by small Cornish vessels, canned in France. 100g, drained weight 70g. Salt is 1g per 100g We like them.
