What angle does this blade need to be sharpened at?

If you look at the cutting edges, you will see the angle the blade has been set to. I use a steel to keep the blade sharp but, if and when I need to use a stone, I would estimate the angle(s) at 10 to 15 degrees as a maximum. DO NOT USE A GRINDER, IT WILL LOSE IT'S STRENGTH. Chef's knife, but it is quite big and could be used for carving. I think I remember it came attached to a retail hanging card and not in a box (like a penknife). Victorinox call most of their kitchen knives, chef's knives, but they call this style a carving knife. I call is a chef's knife, because it has a point and the grip keeps fingers away from crushing against the chopping board.
