For whipped cream and foams you will need N2O cartridges. If you want to carbonate, you'll have to buy CO2 cartridges.

Seems like people in the question/answers here aren't reading the directions properly. You don't need multiple chargers for this and you don't need any gums or stabilizers. You have to SHAKE the whipper HARD after you charge it. Every shake will change the texture of the whipped cream or other liquid. The directions recommend 6 shakes, but I find sometime 6 shakes can still be fairly liquidy. Sometimes I like it more runny and mix is some cocoa powder and make a mousse. For normal use though usually about 8 hard shakes is what "normal" whipped cream would be (my girlfriend has to shake it more to get the same effect so it differs.) If you like it REALLY fluffy shake it more. Also you don't want to add anything that is going to stiffen the mix or add particles to the mix because it will start to clog and won't dispense properly. If you OVER shake it you'll find it will stiffen so much it won't all come out, so any kind of additive that makes it stiff will be a BAD idea. Trust me I use this thing EVERY SINGLE day, I've gotten very used to how this works. In fact I've tried multiple chargers in one go and never found it made any difference to the texture of the whip. It's all about the shaking POST charging.

Can you use co2 cartridges in the gourmet whip plus for sodas

You "can", although whether you should or not is another matter entirely.  I once accidentally used a CO2 charger for whipped cream. Let's just say that the resulting product was not pleasing. Carbonated whipped cream proved to be too much of a palate challenge for anyone to overcome eating a traditional pie. It might have uses in avant garde cuisine, but that's not my style.  In addition, CO2 chargers are designed to carbonate 1 liter of water. Your resulting soda would be entirely too carbonated, as was my unfortunate whipped cream.I do not know if the regular use of CO2 chargers would have any impact on your whipper, but my one-time error has seemingly had no impact on the function or finish.

What is the difference between this model (Gourmet Whip) and the Profi Professional model? I'm trying to decide which one to buy...

The Professional comes with a rubber gasket.  You need a silicon gasket for it to use hot or cold.
