Q: I have a full size Korg keyboard - it measures 54" wide by 18" deep. The table measures much smaller, is it ok that it would overhang the table?

Honestly i would not know a Korg from a Klingon, but i did use my stand to be the base of a take-down computer desk in my 40' motorhome (full-timer now). I can hang a 24" ASUS monitor off the long side...straight out, and it doesn't tip. Maybe a good bump could but it's stable. I made a desktop out of some pine from Lowe's...18"x 30" and its fine. This sucker is strong and yah, i sat on it once..and i weigh north of 250lbs. You should be fine so long as your keyboard is secured on board the stand!

Q: I want to use this in a wheelchair. What is the maximum width between the inside of the legs?

I use this stand while sitting in a wide (22" seat width) Permobil F3 power-chair - I'm a partial quad. While it's not my favourite stand, it does the job, I bought it on a dealers for use with a Kawai stage piano, but that was a no go. It couldn't handle the weight, wobbling even under light use to the very edge of tragedy. But it works fine under either my NI S49 or my Elektron Digitone Keys. They weigh in at a third of the weight of the Kawai, and are also shorter, not requiring the stand to be fully extended. The wobble disappeared, and the stand seems very steady. I say all this to suggest that the maximum usable width may not be stable, depending on both your equipment and your playing style. So if the rep is saying 42, plan on using less -- maybe 38".
