This flour is awesome for baking cookies. It has the same taste & texture as wheat flour, which I can no longer eat. It's a very smooth, velvety texture. I no longer feel that I'm missing out.

Use in place of wheat flour with adjustments to gluten free cooking. Depending on recipe the addition of eggs and/or skim milk powder (diet permitting) may provide best results.
