Quality, but be forewarned: This is the flexible version of the knife.
First off, this knife appears to be everything I expected from a Victorinox Forschner; it is sharp, lightweight, and has a very grippy (especially when wet) Fibrox handle. I've been using Victorinox Forschner for a few years now, and they've been great. They are durable, and an occasional pass on a honing steel gets them right back to cutting shape. I have zero doubts that this knife will function just as well as my other Victorinox Forschner knives.However...Be forewarned that in the case of this knife, you are getting the 8" version (big), with a semi-flexible blade. Some people may like the slight flex, but others may not... and since it isn't mentioned in the description, I figured I should bring peoples' attention to it. (Victorinox Forschner produces several of its boning knives AND its filet knives in semi-flexible and non-flexible varieties.)

Will this beat out an expensive knife with better steel, no
Decent knife for the money. Seems to hold its edge well again for the money. Will this beat out an expensive knife with better steel, no. Will this cut through a tough fish like a sheepshead, yes.

Excellent, sharp
Excellent, sharp, flexible, knife. I use it to quickly slice newspaper pages apart as part of my archive work. Knife carries the Victorinox label, not Forschner. Perhaps the latter company was bought out by the former? No matter. I'm sure the knife is the same one as Amazon displays in its listing.

Very good knife.
This is an outstanding knife. Be advised it is very flexible and extremely sharp.I did the hair test. I took a strand of my girlfriends hair and held it by one hand and used the knife to cut the hair under its own weight. Most knives are not sharp enough to successfully do this.

It Will Cut
Good inexpensive knife - came sharp and is holding it's edge well. Long enough for filleting whole salmon - grip indexes nicely. "It Will Cut"

I've been a chef for over 20 years. I am a huge fan of Forschner cutlery for the price. This knife is no exception. Sheath is very heavy duty.

Good knife, great value
Bought this for a friend and have heard great things. When I received it, it is flexible enough for good filet work. Not especially hefty or premium-feeling, but appears to get the job done better than other knives I have spent a much more for than this.
