This is my all-time favorite! Such a delicious taste all by itself - and 'especially' prepared as cold noodles: with toasted sesame oil, ume plum vinegar, and sprinkled with black and white sesame seeds. For an extra treat, cook some arame to mix in + season with mirin sake, chopped scallions and freshly-shredded ginger and garlic in your suribachi. Aahhh! Heaven in a simple dish! Eden offers such beautiful quality products for a healthy lifestyle and I'll enjoy them for as long as I live! Experiment with their other unusually-delicious pastas: lotus root and wild yam. They all provide a foundation for such a variety of seasonal dishes - with the addition of squashes and sweet potato, shredded daikon or black radish, aduki beans and kombu...I wax poetic when I think of how I look forward to cooking with Eden foods because, no matter what my mood or whether I'm having company over, I know the meal will be a success!!!
