How thick is this grill pan?

It's a typical thickness, maybe a cm or so, but it is extremely light and you can easily push it off of the cooktop surface with a spatula when you are trying to flip something.  I returned mine and bought this one, which is much better, The Rock Reversible Grill/Griddle.  It's about $20 at Costco and about $30 other places.  Trust me, it is awesome and locks in on my gas stovetop so it doesn't move around.  I use it 4-5 times a week and it is worth every penny.

Question 2

Does this come with the handle attached or do you need to assemble? If so, is it easy to attach?

It comes with the handle not attached. It was easy to attach, including directions, extra screws and  screwdriver. I got it on quickly and easily.  I am comparing this to a different brand i got first with nonattached handle, it didn't have any directions, despite having a little information booklet, it just said "you have to attach this yourself" under directions. It was hard because at first i had to turn the screw for a long time and i wondered if i was doing something wrong or if it was  the wrong screw. Finally it began to tighten so i tightened it carefully, avoiding stripping the screw, and when i finished, it was attached and it wasn't completely tight. It did not shake, it seemed to be tightened because it was firm, but it made a rattling noise when i moved it and handled it. Annoying. That one had a couple of other cleaning related problems so i got this one to give it another try and no problems at all. i've been using it only a few times so we'll see but i like it.

Does this dethaw meat?

Meat should be thawed before cooking to get a better even cooking.  But I do put frozen burger Patty's on my griddle and they don't stick. Hope Your question was answered.

Can I use on a charcoal grill?

The product description says it is good for "Portable for Indoor Stovetop or Outdoor Camping BBQ" use.  I beieve it also says it can tolerate heat up to 575 degrees F.  But I have never tried it putdoors on a BBQ grill.
