Q: can you put the powder straight into hot coffee?

I wouldn't. I don't drink coffee, but I would suggest mixing the powder and coffee crystals in a little room temperature or warm water. Then add your boiling water. From my experience, the powder has a tendency to clump when added to hot water. Hope that helps.

I just read in "How Can It Be Gluten Free" cookbook that to improve the results of their gluten free flour blend recipe, add nonfat milk powder. To my joy, as I have a son who is allergic to dairy, they said you can also substitute dry soy milk powder with great results. This from America's Test Kitchen.

Hi! The bag says 30 servings per container. It also says to mix 4 Tablespoons of powder to 8 ounces of water. That’s a good place to start. Of, course, you can use more or less to your taste. I did notice in the item description that they recommend 3 Tablespoons of powder to 5 ounces of water...take your pick, but I tend to side with the actual package directions.
