The manual says" When the desired temperature has been reached, the unit will beep 3 times and KEEP WARM light will begin to flash. At this time, the heat will automatically switch off. Press KEEP WARM to keep your meal ready until serving time." So, It appears you must manually change it to KEEP WARM. It also says that KEEP WARM should not be used for more than 4 hours.
