I grew up in upstate NY near farms that tapped maple trees in the spring. The sap would then be boiled down in huge vats inside old barns, using wooden fires. This syrup is the closest I've come to that taste. It is precious and money well spent. When I opened it and took a teaspoon, it was hard to stop "tasting"! I wished I had a gallon of it!
