Do I need to add xantham gum for baking with this?

I use dove farm gluten free baking powder and it always produces a moist sponge.

Can this be used instead of regular plain flour as it is?

Yes. I use it for making pancakes and in my opinion really nice pastry. (I use a beaten egg with a little water). It soaks up any liquid more quickly, but you just get used to adjusting. It has some recipes on the side of the packet.
