Hi, do these tongs have a "spring" in them, so while using them they don't "slam" shut. Does that make since? (Not the locking clip part when storing)

Hello, yes, it has the spring inside, the lock could keep it in different status, locking or unlocking. Have a nice day.

Is the spring also made of stainless steel? Because I've had tongs where the spring and surrounding parts inside started to rust.

I don't think so, as stainless steel, isn't spring steel. I will say these are great! they have a very clever locking mechanism that has actually made them my favorite I've ever had of this type of cooking utensil. Good luck.
