The Casings we choose for Deer Summer Sausage
The only way you can afford to get good deer sausage is to make it yourself. When have mad 100s of pounds of Summer Sausage and these Casings work the best. We soak the Casings in water prior to filling to soften and make them more usable. We are able to fill with right at 1lb of meat per casing. Then off to the smoker. After smoking we place them in a cooler full of ice to stop the cooking process. These Casing hold up to it all.

easy to use even as a first timer
I wanted a casing that would be easy to peel off my summer sausages I was making. I don't like chewing on the so called edible ones found on commercial sausages. So I set out to make turkey summer sausage. I I soaked these in water for 20 minutes and longer as it took a while to fill them as I had never done it before. I also used a butcher twine to seal each end. I made 10 sausages each not quite a pound as I didn't compact the filling as much as I could have. But all said and done, a success! I cold smoked them first at 140 in my Ninja Woodfire grill and turned up the heat to 160 after one hour, and to 180 after another hour for an additional two hours and 185 until I got my preferred temp of 165. The casings held up beautifully and allowed the cold smoke flavor to come through. Very happy and will not stop making my own delicious summer sausage!

Good casings
I bought this for my homemade summer sausage. They are just the right size for gift giving. I like that they are pre-perforated so I don't have to. They held up well in the smoker and I had no problems with any of the casings bursting. I will buy them again.

Worked wonderfully
I was not expecting the small perforations on the sleeves, but they worked wonderfully to remove excess water from the sausages. I used these to make some venison and pork summer sausages and had no issues at all. Highly recommended.

Did the Job
Would be helpful if the kit included strings to tie the open end. Otherwise it is a great product.
