Best knife sharpening kit I’ve ever owned
Fantastic product. I now have the sharpest knives ever, no more tests of my skill using a whetstone. Set the angle for your particular style of knife - and work the knife across the wheel using the guide. Perfect. Expensive but I’m hoping it lasts a lifetime

Great bit of kit.
Too be honest it may not be within budget of average home. It’s not cheap, let’s say it like it is. But for a variety of knives it’s a great, super sharp solution. Will last for years. It’s a sharpener for keen cook, and or knife enthusiast. I’ve been a caterer for 50 years. Have this at home for my own vast collection of knives. Buy once, buy right you will be happy. This will last your whole life, keeping your top quality knives in perfect condition. Im very happy with it.

Expensive... but worth it
Very effective compact machine. Extremely quiet and feels solid. Its first use was to sharpen six extremely dull Global kitchen knives - in about 20 minutes (they were very dull). They now cut paper easily. I found this machine very simple to use compared to stone-sharpening: easy to set up and very easy to use, as long as you don't expect it to sharpen a dull knife on the first swipe. The cost is an obvious downside, but it's up to potential buyers to decide, so no points off for that.

Be patient
If your knives have been neglected for a while or sharpened using cheap sharpeners, it's going to take a while to get them back to the correct angle. Don't expect to rejuvenate knives with a couple of passes, no sharpener is going to do that. Practice on an old knife you don't care about to get familiar with the machine. Once you've got the hang of it (it's really not difficult) you'll be glad you made the investment. Once your knives are sharp, it'll only take a few passes to maintain them. Very wise purchase that'll last a long time.

Stick with it for best results
I've lived with this sharpener for a week now and my first impressions were not good. So, I watched a couple of YouTube videos on how to get the best out of it and realised that really dull, neglected knives need a lot of work. But once you've put that effort in, wow! My wife bought me a set of Wüsthof knives a few years ago and once they lost their edge, no matter what sharpener I tried, I just could not get them back to how they were when new. I tried all kinds of different systems including the Ken Onion edition Work Sharp, but nothing came close. I was going to indulge in the T-2 version Tormek, but the price put me off so I thought I'd give this a go. So glad I did. Unless you're working in a pro kitchen environment, the T-1 is perfectly adequate for home use. The key to getting a really sharp edge is to keep going on the grinding wheel until you get the bur on the opposite edge of the knife. It's pointless sharpening the other side until you get this and it's very easy to feel (and see under LED lighting). Once you get that, do the same number of passes on the other side and keep going from side to side reducing the number each time until you do one pass each side. Then use the honing wheel. I also bought the BACHER Premium Leather Strop which gives you the final polished edge. I highly recommend this item.
