Do you need to add an oxygen absorber ? And if so what size please?

This is likely a more complex question that you think - certain foods should not be stored with oxygen absorbers, and the rule of thumb seems to be avoid anything with over 10% water content, but that's not a universal rule so need to check really whatever you are planning on storing (eg: don't try this with Jerky unless it's literally bone dry) - some baddies like botulism thrive in zero oxygen environments so it's best to check online before you try to store something that might make you sick later.   Saying that, for this size bag if you will it mostly full with stuff then I would think a 150+ Oxy absorber would do it, but there's zero harm in overkill there, so sticking a 300 in would be fine (eg: tube pasta is mostly air by volume, as opposed to say rice, so take that into account also).  Another one to avoid might be sugar for example, as you'll open the packet up later and a solid brick will fall out you'll need mechanical equipment to break up if you want to add to your tea/coffee.

Can you add boiling water inside the bag to rehydrate food?

I should think so. Why not experiment with an empty bag and boiling water over your sink first (making sure you don't support the bag from underneath with your hand, otherwise it’s ouchy-time). Hold the opening firmly with finger and thumb, even better, wear a paint of marigolds when you try it.

If it works when the bag is empty, it’s guaranteed to work when rehydrating food as the food will absorb at least some of the heat as it absorbs the water. I’m a bit of a prepper (without underground bunker and weapons arsenal) and I use the mylar bags, vacuum-sealed for loads of stuff. If that’s why you’re asking, just make sure to label the bag with what it contains.

As an aside, I haven’t tried it yet, but I suspect two or three mylar bags, each inside the one before, you should have good RFID protection, meaning your phone or car key fob can't be seen electronically and they should also provide some protection against an EMP incident too (worth a look whilst Putin is threatening to lob nukes all over the place). I’m going to give it a try at the weekend. Bag my mobile, call it, and if it fails to answer you've just saved a shedload of money.

What weight of food will each bag hold please

I use these for Wild Camping trip and they comfortably hold around 500gms of food, obviously it is better to cut things like potatoes and other veg into smaller than usual pieces. These are an excellent product for "boil-in-the-bag" pre prepared food

Can these bags be heated up with content after it has been heat sealed?s

Yes they can, they can be used to boil in the bag for up to 30 minutes.
