More syrup please!
I bought this as a gift and she loved it! She mixed up batches of nuts and then asked how she could get more syrup. A spatula had to be used to help mix the nuts at times but all in all the nuts are great!

love this pan!
I came to this brand of nut roaster because the "Back to Basics (B2B)" appears as if its not being made any more. I make 30-40 lbs of candied pecans per year so this is the 4th roaster I have gone through in about 8-9 years. In the beginning I loved the B2B because it was so easy to use and easy to clean. But as the demand for my nuts grew the pan couldn't hold up to the stress. The coating came off VERY quickly and OVER AND OVER the parts failed. I ended up having to lube every thing with food grade lubricants, and replaced the nuts that hold the blades and handle on with a locking nut since it constantly came loose. I was shocked to see that I couldn't find a B2B pan this year. (well...they are still listed but for $80 a pan...no thanks) This pan is identical in style with a few AMAZING differences. NO NON STICK COATING! I'm only about 10 lbs of nuts into my busy season right now and there isn't a scratch on this thing! Also there isn't a nut that locks the assembly together...its a "quick release" where it snaps into place with one of those spring loaded bearings or something. So its easy to take apart to lube and clean! Another thing I noticed is that the Victorio is a thinner gauge metal than the B2B pan. I am NOT complaining though. This pan heats up SO much faster and gets the sugar cooked faster than my other pan. When you are making 10+ pounds in a day quick production time is a massive PLUS! Like I said...im only like 10lbs into the season so if anything changes after the next 20-30 pounds I will let you know! Also: The recipes may call for 2 cups...but if you are making lots of nuts, like I do, the actual capacity is 3 cups. This might mean the 2 cups of nuts and 1 cup of sugar....but I comfortably fit 3 cups of nuts and the recipe and a half in my pan! The picture included shows the new pan on the left after 10lbs of nuts so far and the right is my B2B pan with SEVERAL spots of wear. **UPDATE DECEMBER 2018** ive been using this pan for a solid two years now and its in almost the exact same condition as the day I bought it. This pan is LIGHT YEARS better than the old back to basics one! do not hesitate to buy this pan. I actually came to the page to buy as second AND THIRD one to help me speed through my candied pecan production! I have added a second picture to the review so you can see the shape the pan is in after two years of heavy use!

feel like might be an isolated defect
I use this to roast coffee. The pan serves it’s purpose and works well. Worth noting - the pan comes in several pieces to assemble yourself. The handle was poorly soldered and wouldn’t stay in place, causing the handle to fall out and either spill the pan’s contents everywhere and/or burn my hands. I borrowed a metal file from a friend and filed down the piece which means the pan is now perfectly usable. I don’t know how many people have metal files on hand so this might render this unusable for some. I do, however, feel like might be an isolated defect.
