We have been longing to sell some sturgeon meat for ages, but just could not find any that we liked. Now we have sourced some really good sturgeon fillets preserved in olive oil. This has two special features: it is White Sturgeon (Transmontanus) and it is made in Spain, where they know a thing or two about preserving top quality fish in olive oil. Transmontanus is well known for the quality of its meat. As its name implies, the meat is white unlike most sturgeon meat. It is also firm and very tasty, where as other species can be rather slimy. It can be used in a similar way to Spanish tuna, say in an Ensalada Mixta, or let your imagination run riot.
